34 Restaurant is hosting an exciting pop‐up with their latest discovery from shores Down Under, chef Ben Orpwood, who will be giving a tantalising taste of the southern hemisphere for one week only.
Ben is passionate about Asian cooking and has travelled extensively through Asia, especially in Japan, gleaning traditions and methods of food preparation. His most notable positions before reaching our island were with internationally‐acclaimed restaurant group Zuma, famous for contemporary Japanese cuisine and Sydney’s Toko and Danielsan (specialising in Japanese izakaya style).
Ben will be joining Harvey Ayliffe’s brigade from Tuesday, 12 May to Sunday, 17 May to helm this foray into The Orient. A few 34 stalwarts will remain (steaks, lobster mac and shrimp cocktail), but the menu will principally be Ben’s. The raw bar will offer sharing plates with sashimi, scallops with yuzu & soy granita and tuna tataki. Fish skewers, spicy barbecue octopus, Ben’s own hot smoked salmon with pickled ginger and British shellfish with XO sauce will be served, amongst other dishes.
Mains will include salt and pepper lamb cutlets and Japanese beef fillets will come from the Robata grill. Ben will be working closely with Pastry Chef Alice Hall to offer a diverse and mouth‐watering dessert menu.
